Juices are made fresh in front of you. Sandwiches are fresh and tasty and look really home-made. I can recommend “Noortje” (the one with salmon). We found this place through “social-deals” where you can save a couple of bucks for this restaurant (as long as the deal is still up)

Delicious for reasonable price and healthy options
This used to be one of my favorite pick-up lunch places in Bruges. It's always hard to choose only one thing. Mostly I go in with the intention of ordering one sandwich and come out with a sandwish and a fresh made juice, sometimes even with an extra piece of pie as desert. Since I'm vegan, I'm a bit more critical towards my food. At Hap they offer 4 or 5 veggie sandwiches but no vegan options are available. You can order and ask to leave the cheese away but this is not cheaper (which I would expect it to be). Because the kitchen is open, you can see that they for example prepare a sandwich with meat first, they don't wash their hands and then prepare your vegan sandwich.
